baking

1. bake the cakes and cool completely.

2. level the cakes and tort (split each into two layers horizontally).

3. fill and assemble each cake on a separate cake circle and secure with a dollop of frosting to stop it from sliding around.

4. add a crumb coat - this is a very thin coat of un-tinted frosting you apply to 'set' the crumbs.

5. refrigerate the cake(s) for at least one hour, preferably overnight.

make the airplane

To make handling easier, form the plane on a freezer-safe plate covered with a piece of wax paper.

1. cut a circle from the cake scraps, about 3" in diameter.

2. cut the circle in half, making two semi-circles, butter one side of each with frosting and stick them together.

3. to form the wings, cut two wedges from the cake scraps (about 2" wide x 1 1/2" long x 3/4" high) and stick one to each long side of the plane body with frosting.

4. to form the tail, cut a small triangle from the cake scraps (about 2" high) and stick to the back of the plane body with frosting.

5. cover the plane completely in white frosting and set in the freezer to firm up while you assemble the rest of the cake.

Assembly

7. using the yellow frosting and a Ziploc bag with a small hole snipped in one corner, pipe a sun rising through the clouds at the base of the cake

8. place a dollop of frosting on top of the cake where you want the airplane to sit and gently slide him off the wax paper onto the frosting.
