This simple design lends itself well to any type of cake you like, but it’s outrageously good with Super Moist Carrot Cake. The mix of brown sugar and Ginger Snap cookie crumbs for the 'dirt' in the garden and the spices in the cake really go well together.

ingredients

- Cake - Lemon Ginger Pound Cake is always good
- Filling - Gingernut Crunch is the perfect companion
- Light brown buttercream
- 1/2 cup Red buttercream for the Ladybugs
- Black buttercream or piping gel
for Ladybug spots and heads
- Green candy melts
- Ginger Snap cookie crumbs
- Brown sugar
- Terra Cotta pot saucer, cake plate or board to hold finished cake

- bake the cakes and cool completely.
- level the cakes and split each into two layers horizontally.
- fill and assemble each cake on a separate cake circle
and secure with a dollop of frosting to stop it from sliding around.
- add a crumb coat - this is a very thin coat of un-tinted frosting you apply to 'set' the crumbs.
- refrigerate the cake(s) for an hour or so to let the crumb coat set.
making the chocolate grass
- melt the candy melts in a microwave safe bowl for 30 seconds on high, stir and repeat until completely melted.
- using the back of a spoon, smear some strips of melted chocolate about 1/8 inch thick on to a piece of wax paper, as shown (below left).
- let set for about 30 minutes then, using a large knife, cut randomly across the strip of chocolate to make small shards, as shown (below right). It’s that simple – now you have grass!

- put the red buttercream in a small ziploc bag and snip a 1/2" hole from one corner.
- pipe a fat 1" long bead of frosting on to a piece of wax paper.
- add spots with black decorator's gel or buttercream.
- add a larger black spot on one end of the body for the head.
- your ladybug should look something like this. repeat for each ladybug.
- place in the freezer while you assemble the cake.

Assembly

- frost the top and sides of your Cake(s) with the Light Brown buttercream.
- mix the cookie crumbs and brown sugar together and, using a spoon or small spatula, press the crumbs all over the cake(s)
- randomly place the chocolate shards into the frosting in varying heights and groups to form the grass.
- put a few ‘clumps’ of grass on the top of the cake, as shown, for the Ladybugs to rest in.
- position the Ladybugs where you want them on the cake and secure with a dollop of buttercream.

You're done! Now go get a well deserved cup of coffee and sit back for a few minutes to admire your handiwork. Remember to take a picture while your masterpiece still looks perfect.
