Baking/leaving out question

Can I bake a cake, let it cool and then cut(tort) it in half and wrap with saran wrap and leave on the counter or put in the refrigerator until I am ready to fill with filling, add a crumb layer and then cover in fondant?
Do I chill the cake after I do the crumb frosting before i cover in fondant?
