Batter Shelf Life

Once the cake batter has been mixed, how long do you have to bake it? I wanted to bake my cake in 6" pans, but only have two.

Hi Gillian,

As long as you're not baking with a batter that relies on incorporated air, like the white cake for example, it's fine to store the batter in the fridge for a few days before baking. Just bring it back to room temperature before baking.

If you just don't have enough 6" round pans to bake as many cakes as you need, in one batch, you can bake in batches without a problem. Just bake the first batch and cool in the pans for 15 minutes, wash and re-line the pans with parchment, then bake the next batch.
