Butter Cream Cheese Filling

I've been looking for a butter cream cheese filing recipe, that will go well with a banana cake?

I also read on one of your recipe, that Coconut cream cheese will go well with the banana cake & was planning to frost it with the buttercream frosting with the banana pudding mix? Any advise on that???

That's kind of something I wanted to do and covering it with MM Fondant, any good ideas on that?

CReam Cheese Frosting Ideas

Hi Iris,

Try this fabulous recipe. It's not too sweet and the white chocolate is just a subtle background flavor, but it adds a lot to the frosting:

3 ounces white chocolate, chopped
2 x 8-ounce packages cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
2 teaspoons grated lemon peel
2 cups powdered sugar

1. melt chocolate, 30 seconds at a time, in the microwave (on high). Stir and repeat until completely melted. Let cool a little.

2. Beat cream cheese and butter together until lighter in color and fluffy (2-3 minutes).

3. Add powdered sugar and beat until smooth (1-2 minutes)

4. Add melted chocolate and beat until smooth.

5. Use right away or store in the refrigerator for up to a week.

This makes enough to frost a 10" round cake.

Regarding the coconut cream cheese with banana pudding mix:

make sure to dissolve the pudding mix in the liquid prior to mixing, to avoid grittiness in the final frosting.

Any of these will work with MM fondant. Just make sure to refrigerate crumb coated cake overnight to allow it to firm up so the fondant won't develop ridges.
