first steps to a successful Butterfly Birthday Cake
- bake the cakes and cool completely.
- level the cakes and split each into two layers horizontally.
- fill and assemble each cake on a separate cake circle
and secure with a dollop of frosting to stop it from sliding around.
- add a crumb coat - this is a very thin coat of un-tinted buttercream you apply to 'set' the crumbs.
- refrigerate the Butterfly Birthday Cake(s) for at least one hour.
making Chocolate Butterflies
- draw out 16 simple butterfly wing shapes on a plain sheet of paper and tape the paper to the back of a cookie sheet.
- tape a piece or wax or parchment paper over the top of the plain paper.
- melt about 1/4 cup of candy melts in a microwave safe bowl for 30 seconds on high, stir and repeat until completely melted.
- tint them purple, using your red and blue candy colors.
- using the back of a teaspoon, fill in the wing shapes to about 1/8" thick (below, left).
- melt 1/4 cup white candy melts and, using the tip of a wooden spoon, dab on some white dots along the top edge of the wings (below, center).
- melt 1/4 cup pink candy melts and, using the tip of a wooden spoon, fill in a large pink oval shape on the lower half of the wing (below, right).
- melt 1/4 cup white candy melts and tint them black then, using the handle of a wooden spoon, dab on a black dot in the lower part of the pink section (below, right).
- let set for about 30 minutes then gently peel off the paper. It’s that simple – now you have butterfly wings for your Butterfly Birthday Cake!

Assemble Your Butterfly Birthday Cake
- divide the buttercream in to three bowls.
- Leave one white and tint the others light pink and light violet.
- frost the sides of the smaller cake with the white and pink frosting, graduating from white on the bottom to pink on the top, as shown.
- frost the top of the smaller cake pink.
- frost the sides of the larger cake with white and light purple frosting, graduating from light purple on the bottom to white on the top, as shown.
- put your Butterfly Cake on to a plate or board now and secure with double sided tape to stop the cake from sliding around.
- Put some light purple frosting in a piping bag fitted with a drop flower tip and pipe a star border around the bottom of the top tier.
- Put some light pink frosting in a piping bag fitted with a star tip and pipe a star border around the bottom edge of the bottom tier.
- Put some white frosting in a piping bag fitted with a small round tip and pipe a small bead border around the top edge of the top tier.
- Using the same white frosting, pipe a small bead in between each of the stars on the border around the bottom edge of the bottom tier.
- Use a small serrated knife to make five pairs of cuts about 2” long and 1” deep in the top of the larger cake (bottom tier). Angle the knife about 45° away from center when you’re making the cuts so the wings will sit at a natural angle.
- gently push one of the chocolate butterfly wings into each one of these cuts, as shown.
- Using the purple frosting and drop flower tip, pipe a vertical row of stars between the wings to form a body, as shown.
- Repeat this for the butterfly in the center of the top tier.
- Use the white frosting to pipe a pair of antenna on the top tier butterfly
- Use the same white frosting to pipe a circle of simple butterfly wing outlines on the cake board, about 2” out from the cake. Space these about 4” apart.
- Use the purple frosting and drop flower tip to pipe three stars in between each set of butterfly wing outlines on the cake board, as shown.
- Use the white frosting to pipe a birthday message around the top edge of the cake if you like.

You're done! Now go get a well deserved cup of coffee and sit back for a few minutes to admire your handiwork. Remember to take a picture while your masterpiece still looks perfect.
