Of all the cake decorating techniques, one of the most requested is "how do I cover a cake with fondant"?
Covering a cake with fondant is a relatively simple process, if a little time consuming.
It's hard to resist that smooth, perfect look that a well covered fondant cake can give you.
Fondant cake icing is perfect for:
- elegant wedding cakes
- modern, contemporary cake designs
- the very popular 'wrapped giftbox' cakes
- any cake design where you need a perfect, smooth canvas to work on
here's how you do it:

- frost your cake with buttercream, getting as smooth a finish as possible. Any major flaws will show in the fondant.
- when the buttercream has firmed up, paint a layer of piping gel over the buttercream or very lightly mist with water.
- measure your cake to work how big to roll out your fondant (you'll need the length of the sides plus across the top of your cake at the widest point).
- roll out the fondant to about 1/4" thick, large enough to cover the area you measured.
- drape the fondant over your rolling pin and trasnfer to the cake, centering the fondant over the top and sides.
- start to smooth snd tuck the fondant around the sides of the cake, using upward motions of your hands to prevent tearing the fondant on the top of the cake.
- when the fondant is smoothed all around the sides of the cake, use fondant smoothers to go over the entire surface of the cake, popping any air bubbles you encounter with a pin.
- remove the excess fondant with a pizza cutter or small sharp knife.
- go over the cake one last time with the fondant smoothers. You're done!
