Can I substitute cake flour for unbleached white
I want to make the classic white cake ,but can I substitute cake flour for the unbleached white flour, If so how much,and do I still need to use the rising ingredients and cream of tarter.. I do have cram of tarter..I hope you can answer my question.Thanks.

Hi,
Yes, you can absolutely substitute cake flour. Just leave out the corn starch and use 3 1/2 cups of cake flour in place of the unbleached flour. You'll still need to use the cream of tartar. It helps the egg whites hold their structure.
