chocolate cake filling ideas?
I plan on making my own cake for my baby shower. The plan is a 9in double layer bottom tier and a 6in double layer top tier. I will be making a chocolate cake and covering it with fondant. I wanted to get some ideas on what fillings I could use that pair up well with chocolate and I wont have to refrigerate. Maybe liquor (not sure if I have to refrigerate that or not).
Also, Do you have any good recipes for chocolate cake (I want it to be as professional of a cake as possible). When I fill my pans for the double layers do I fill half way or more? Will it be the same for the 6in as it is for the 9in?
I want to make the cake 1 or 2 days in advance so that I may have more time for the fondant decorating. As long as I keep the cake wrapped in plastic, is it ok to make ahead and leave at room temperature? Will the cake dry out?
Any other suggestions that you feel I need to know and did not ask will be greatly appreciated.
