Chocolate Ganache filling

If I use the Chocolate Ganache recipe as a filling in a wedding cake, how long can the wedding cake sit out without being refrigerated? Is 8-10 hours too long? We will deliver the cake in the morning to the reception hall (which is air-conditioned) at about 11 a.m. and it will remain until the reception at 8:00 p.m. Will the ganache spoil with the cream in it?

Hi Tina,

Chocolate ganache can be stored at room temperature for up to 48 hours, as long as it's cool room temperature. So an air-conditioned room will be fine.
