chocolate leaves

Hi can u advice on chocolate leaves. my technique is just to melt chocolate, let it cool down and spread it on the leaf but i have never been able to separate the leave and the chocolate. the chocolate always breaks into pieces.

Hi Vanissa,

Here are a few tips for making chocolate leaves:

1. Use a small paintbrush to paint the melted chocolate on the leaf.

2. Paint the chocolate on to the back side of the leaf. This is the side that's more heavily veined.

3. Paint two very thin coats rather than one thicker coat of chocolate.

4. Freeze for five minutes to set, then very carefully peel the leaf from the chocolate, always starting with the stem end.
