Decorating a ganache glazed cake

Can I glaze a cake with ganache and then decorate it with fondant cut outs? Should I keep it in the fridge? Can I do more than one layer this way? I'm new to this (obviously!), and I need help!! :)

Ganache and Fondant

Hi AJ,

Fondant cut-out on ganache will work just fine, although you don't want to add them to the cake more than about 24 hours before the event, since they will start to 'melt' a little after that time.

You can refrigerate a cake with fondant cut-outs and since you want to use ganache, you will need to refrigerate the cake. To use ganache between layers, let it set for a few hours until thick enough to spread. You can also whip the set ganache for a lighter, mousse-like filling. Just be careful not to over-whip or you'll end up with chocolate butter!
