Dilema with MM fondant

Dear Michelle,
on plenty sites on internet, and yours too, i read that you should not refrigerated cake covered with MM fondant. But on the other side cake filled and frosted with cream cheese icing should be refrigerated.
My question is, what should i do with a cake filled and frosted with cream cheese icing and than covered with MM fondant?
FYI for next 2 months in my area temperature is around 87 F, (30 C).

Hi Marica,
Ideally you wouldn't refrigerate a fondant covered cake,but with the temperatures being that high, you really need refrigeration for the cream cheese filling.
The danger is that condensation can form on the surface of the fondant when the cake is removed from the fridge.
Here's a few tips that should help:
1. Place the cake in a cardboard box in the refrigerator. This will help absorb any moisture that's present.
2. When you take the cake out to come to room temperature for serving, place a fan set on low speed close to the cake to help dry out the fondant and prevent condensation spots from forming.
3. If you have access to a dehumidifier, have it running in your kitchen when the cake comes out of the fridge.
