Do you have to refrigerate a cake that has a filling?

I'm making a cake covered in fondant. I like to make my cakes 2 days prior to an event and cover in fondant the day before. Fondant can't be put in the fridge so is there any filling that is able to sit out?

The best fillings for a cake that is to be stored at room temperature are any that don't contain eggs or dairy.

Buttercream is probably the best choice, since it stores well at cool room temperature for up to five days and is very versatile. You can flavor it any way you like.

Although chocolate ganache contains cream, it can also be stored at cool room temperature for up to 48 hours, so you could also use that.
