These Easter Cupcakes are unique and beautiful yet so easy to make you’ll be amazed. Each one is a perfect little reminder of spring. Just imagine the breathtaking display of wedding cupcakes these would make at an Easter time or spring themed wedding. You could make these without the flower pots and they still look great, but when such a simple addition makes such a big impact why wouldn’t you do it?
The simple design takes advantage of two classic seasonal candies available at this time of year – marshmallow Peeps and Jelly Belly speckled chocolate malted eggs. You get instant impact with no effort at all. Add some chocolate ‘grass’ to rest them in and you get lots of ‘wow’ for very little work! And don’t worry – although the chocolate grass looks impressive it’s super simple to make.
You can use any type of cake you like, but it’s fun to use Classic Moist Chocolate Cake so you get the illusion of ‘dirt’ when you dig in to the cupcakes.

A quick Baking Tip before we begin...

- If you use these great little party cups, which you can find here
, you don't need to use cupcake pans. You can just sit them on a cookie sheet - less pans to store and easier clean-up!
- Most of the cake recipes on this site will yield about 24 cupcakes.
ingredients for perfect Easter Cupcakes
- cupcakes - Classic Moist Chocolate Cake is perfect
- White candy melts
- Green candy color
- Yellow candy color
- Jelly Belly speckled chocolate malted eggs
- Yellow Peeps marshmallow chicks
- half a recipe of buttercream
- sky blue and yellow gel food color
- Small flower pots (about 2” – 3” diameter)
first steps to successful easter cupcakes
- fill the cupcake liners about 2/3 full with batter for baking.
- bake the cakes and cool completely.
Make the Chocolate Grass For Your Easter Cupcakes
- divide the candy melts evenly in to two microwave-safe bowls.
- melt the candy melts on high for 30 seconds at a time, stirring after each interval, until completely melted and smooth.
- tint the melted chocolate two shades of green, using the green and yellow candy colors.
- using a 1/4" wide artists brush, paint 1"-2" high strips of melted chocolate about 1/8" thick on to a piece of wax paper, spaced about 1/2" apart, as shown (below left). Let set for about 10 minutes.
- melt the other half of the green candy melts and paint in between the first strips of grass, as shown (below, right).
- let set for about 30 minutes then make random vertical breaks in the strip of grass to create shorter, more useable sections about 3” long, as shown below.
- Now you have chocolate grass. How easy was that?


Assemble Your Easter Cupcakes
- frost the top of your cake(s) generously with the green frosting, as shown (below, left).
- drop each cupcake into a flowerpot, as shown (below, center).
- arrange pieces of the chocolate grass around the edge of the cupcakes, by pushing them gently in to the frosting to secure.
- position one speckled egg and one marshmallow chick in the center of each cupcake and secure with frosting, as shown (below, right).

Your Easter Cupcakes are done! Now go get a well deserved cup of coffee and sit back for a few minutes to admire your handiwork. Remember to take a picture while your masterpiece still looks perfect.
