Filling for Coconut Cake

What can I use instead of icing sugar for my butter cream filling.

Hi Mandy,
If you don't like using icing sugar, you could try making an Italian or Swiss Meringue buttercream. These both use a hot sugar syrup (regular sugar and water boiled together), poured slowly over whipped egg whites and finished with butter.
