Filling for Coconut Cake

What can I use instead of icing sugar for my butter cream filling.

Hi Mandy,

If you don't like using icing sugar, you could try making an Italian or Swiss Meringue buttercream. These both use a hot sugar syrup (regular sugar and water boiled together), poured slowly over whipped egg whites and finished with butter.

I use coconut pie filing

I make a coconut pie filling and fill the cake with that. Everyone raves over it! I googled home made coconut pie and found a really nice one that way. I also substitute coconut milk for milk in Michelle's buttercream recipe. Everyone LOVES Michelle's buttercream, I always get complimented on how creamy and not too sweet it is.
