Flour texture

How do I come up with the right amount of teaspoon or tablespoon of cornstarch addition to every one pound of plain flour.

I noticed it helps to make the cake lighter. I would like to have a basic proportion.

Also how much plain yogurt to every pound of mixture.

Hi Ellen,

I'm glad the Marble Cake recipe was a success for you. It's one of my favorites, because it's so versatile.

For every pound (454 grams) of flour, you'll need 56 grams of cornstarch. That's 21 teaspoons or 7 US tablespoons.

For the plain yogurt, I'm not sure what you're adding that to. I often add 1/2 cup of plain yogurt or light sour cream to one recipe of cake batter without any problem.
