Ganache Problems...

I tried making the chocolate ganache with the recipe listed on this website. I increase the recipe proportionally - 3 C cream and 24 oz chocolate chips. I heated the cream, but did not let it boil. Poured it over the chocolate chips, waited 3 minutes, stirred until it creamed together, and let it sit. It never thickened - it was still like liquid. So I put it in the refrigerator and checked on it every 15 minutes - but it still never thickened.

I thought it was a lost cause, as I had followed the recipe listed on the website. Just to see what would happen, I then put it in my mixer and mixed it - and it thickened to where I could fill my 1/4 sheet cake with it.

My question is - where did I go wrong? I thought I followed the recipe but it never thickened until I put it in my mixer. I don't see on the recipe where it says you are supposed to mix it.

Could you clarify for me? Thanks.
