grainy filling

I made the lemon mint filling and it broke down after mixing.

Is there a way to fix this?

The flavor is excellent I just need a fluffier texture.

Hi Christina,

Here's a few tricks you can use if your buttercream 'breaks':

1. Increase the mixer speed for another 2-3 minutes until the mix comes back together.

2. Add melted white chocolate. This doesn't change the flavor dramatically, but it does re-emulsify the ingredients.

3. Add extra powdered sugar to re-incorporate the mix.
