I need to make a "healthy cake" for my friend, and it also needs to be able to be cut into something. HELP!!!!!!

Making A Healthy Cake

Hi Bailey,

Here's my favorite healthy cake recipe. It's low in fat, low in processed sugars and high in fiber (compared to your usual cake), but the flavor is fantastic:

Banana Walnut Cake
(makes one 8" round cake - 3 layers)

2/3 cup mashed banana (about 1 large banana)
2 tablespoons butter, softened
1/2 cup plus 1 tablespoon unsweetened applesauce
6 large egg whites
1/4 cup water
1/2 cup frozen apple juice concentrate
1 cup oat flour (process 1 cup rolled oats in food processor until flour consistency)
1 cup whole wheat pastry flour
1 1/2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 cup chopped walnuts
1/2 cup raisins

1. In the bowl of a stand mixer, add mashed banana, butter and applesauce and beat on low speed until creamy.

2. Add egg whites, water and apple juice concentrate and beat well on med-low speed until combined.

3. Stir in flours, baking powder, baking soda and spices and beat on low speed until smooth.

4. Fold in walnuts and raisins by hand, just until combined.

5. Spread batter into prepared cake pans (2/3 in one and 1/3 in the other) and bake in a 350 F degree oven, checking after 20 minutes and every 5-10 minutes after, until cake tester comes out clean.

6. Cool cakes in pan for 15 minutes, then on rack until completely cool. When cool, slice the thicker cake layer in two horizontally and you now have three layers to fill, frost and decorate however you like!
