how do I get smooth frosting oin my cake?

What are some tips for getting icing smooth on cakes?

Hi Paula,

Here's a few tips you may find helpful:

1. Use a stainless steel bench scraper or a wide blade, wallpaper spackling knife to smooth the sides of the cake. Always use a turntable - it makes the job of smoothing much easier.

2. Frost the sides of the cake first, starting at the bottom edge to about half way up. Add a generous amount of frosting all around, smoothing as you go.

3. Frost the top of the cake second, using a very generous amount of frosting and smoothing so that the frosting extends over the edges of the cake. Leave the excess there for now.

4. Now frost the top half of the sides with a generous amount of frosting, smoothing as you go with a regular or offset frosting spatula.

5. Now, with the scraper held straight up and down against the side of the cake, keep turning the cake on the turntable until you have smoothed all the way around.

6. Complete the top of the cake by removing the excess frosting with the scraper. Do not push down on the scraper - you just want to move it across the the surface of the cake to remove the excess. Continue all around the top edge of the cake until you have a smooth finish.

The best tip of all - practice, practice, practice!
