How do I prep strawberries to add to cream cheese filling?

I am making a strawberry sponge cake and wanted to do a strawberry cream cheese filling. Would I puree fresh strawberry and add to the recipe or can I slice fresh strawberries and mix them in? Also, do I need to omit the lemon juice from the recipe? Thanks so much!

Hi Noelle,

There's a few different ways you could do this:

1. Add a layer of cream cheese filling (including lemon juice), then top with a layer of strawberry filling. This gives a nice layering of flavors, rather than mixing them all together. You can use this recipe for the strawberry filling:

2 1/2 - 3 cups strawberries, chopped
3/4 cup sugar
3 tbsp cornstarch
1 cup water, divided (1/4 cup and 3/4 cup)

In a large saucepan combine fruit, sugar and 3/4 cup water and cook over medium heat until almost boiling. Mix cornstarch in remaining 1/4 cup cold water and add to pan, stirring constantly until boiling and thickened. Cool before using.

2. Puree the strawberries and swirl into the cream cheese filling after you've added it to each cake layer.

3. Chop the strawberries and fold in to the cream cheese filling by hand, right before filling the cake.
