How do I prevent the modeling chocolate from melting

I am attempting to sculpt figurines out of modeling chocolate however I am finding it hard because i have to keep stopping to put the chocolate in the fridge to harden it back up! Is there a trick to preventing the modeling chocolate from melting while sculpting??

Hi Tania,
If you're working in a hot or humid environment, the chocolate will require periodic refrigeration to harden it up again.
I don't have any tricks up my sleeve for this one.
If your cake cannot be refrigerated then presented in an air conditioned room, I would look at using gum paste instead.
