how do I substitute medium eggs for large?

hi, just a simple question: if a recipe calls for eg.4 large eggs and if I have 4 reg. to small ones, can I add an extra egg? how does this affect the recipe. thanks

Hi Hany,
Each large, store-bought, egg is about 3 1/4 tablespoons, so for four you're looking at 13 tablespoons.
The best way to substitute is by volume - that way it doesn't matter what size eggs you use. So however many medium eggs it takes to make 13 tablespoons is how many you should use. And, if you have to, scoop out a little egg white to take it down to the right amount.
