How Many Layers Can A Boxed Cake Mix Make?

I have been using boxed cake mixes and 9 inch pans. I can't seem to get more then two layers out of the batter. Am I doing something wrong?

Your recipes say that they make enough batter for a 3 layer cake. Is that because your recipe makes more batter then a boxed mix?

Hi Gillian,

The scratch recipes do produce more batter, but you can also get three layers from a box mix.

If I ever use a box cake mix, I always use an 8" round pan so I know I can easily get three layers from the mix. To do it easily, you'll need two pans. Pour 1/3 of the mix into one pan and the remaining 2/3 of the mix into the other. After baking and cooling, tort (slice horizontally to make two layers) the larger cake and you have your three layers.
