How much filling will I need?

How many cups does your Raspberry white chocolate cream cheese filling make?
I have been asked to make a strawberry filling for a white wedding cake with a white ganache covering. I like this recipe and want to get an idea of how much it makes, can I refrigerate it, and what would be the make ahead time for preparing 5 tiers? Thanks for all the wonderful information.

Hi Lorraine,
The Raspberry White Chocolate Cheesecake filling makes about 6 cups. This filling can, and should, be refrigerated.
For a five tier cake, I would start 4 days before the event. Here's a possible time line:
4 days before - bake all cake layers. Cool, wrap and refrigerate. That's a mammoth task in itself!
3 days before - Make filling and frosting. Tort and fill the tiers. Wrap and refrigerate to firm up the filling and avoid bulges under the finished frosting.
2 days before - Crumb coat and refrigerate the tiers for at least 2 hours. Top coat with ganache and refrigerate overnight to give everything a chance to really firm up.
the day before - assemble and decorate the cake.
Day of the event - finish any last minute touch-ups.
