how to stop pudding filling from making cake soggy

by Danielle Weis
(West Babylon, NY)

I'm baking a chocolate cake with a vanilla pudding filling and than covering the cakes with fondant. If I make the cake the day before the party how can I ensure the cakes don't get soggy from the pudding filling? Also, can I put the cake into the refrigerator with a fondant cover?
Thanks - Danielle

From the editor:

Hi Danielle,

Here's an easy trick you can use that will prevent any filling from making a cake soggy. Paint the cut surfaces of each cake layer with melted chocolate before assembling and filling. This also adds a great, unexpected crunch and an extra layer of flavor.

You should not refrigerate a cake that's covered in fondant. There's a danger of condensation spots forming once you take the cake out of the fridge, which will ruin the beautiful finish the fondant gives you.

Don't forget to take lots of pictures so you can come back here and show them off.

Thank you so much for this. I faced this problem a lot of times. Ultimately I had stopped making cakes with a pudding filling, though I loved it. Hope now I can make it my loving way.
