These Ice Cream Cone Cupcakes are one of the cutest ideas ever! They make a perfect 2nd or 3rd Birthday Cake. There’ll be smiles all around when these adorable soft-serve ice cream cone look-alikes make an entrance at your next birthday party. Of course, they’re so easy to make you don’t need to wait for a birthday – any time is a good time for an Ice Cream Cone Cupcake party.
The meringue ‘ice cream’ makes these cupcakes just like real ice cream cones, only better. Unlike using frosting to achieve the look, the meringue won’t melt, make a mess or morph any of your toddler guests into sugar monsters! Even better, there won’t be gobs of frosting to scrape off every surface in your house after you’ve served them – because we all know what happens when a toddler gets their hands on that stuff!

ingredients for the perfect Ice Cream Cone Cupcakes
Meringue 'ice cream' for the top of your cones – make this the night before
To Make The Meringue ‘Ice Creams’:
- 3 large egg whites
- ¼ teaspoon cream of tartar
- ¾ cup granulated sugar
- Piping bag or gallon size Ziploc bag
- preheat oven to 200° F
- in the bowl of your mixer, using the whisk attachment, beat the egg whites until foamy.
- add the cream of tartar and beat until the whites hold soft peaks when the whisk is lifted.
- add the sugar a little at a time and continue beating until the mixture holds stiff peaks when the whisk is lifted from the bowl.
- take a piece of parchment paper that’s large enough to line a cookie sheet and draw or trace 16 circles about 2 1/2” in diameter on to the paper.
- flip the parchment and place on the cookie sheet
- using a piping bag without a tip or a gallon size Ziploc with a 1” hole snipped in the corner, pipe a meringue ‘ice cream’ swirl to fill each circle, as shown.
- bake for 1 ½ hours or until the meringue is dried out and crisp to the touch.
- open the oven door a tiny bit and leave to finish drying out overnight.

You’ll Also Need:
- cake – half a recipe of Lemon White Cake is perfect
- Filling – one box of your favorite instant pudding mix
- 16 cake type ice cream cones (flat bottomed)
- about 2 cups of white buttercream
- gallon sized Ziploc bags or disposable decorating bags
- A mellon baller

first steps to perfect ice cream cone cupcakes
- follow the directions for your cake recipe up to pouring into the pans.
- line up the ice-cream cones on a cookie sheet.
- using a teaspoon or a small ice-cream scoop (2 tablespoon size is perfect), scoop the cake batter into the cones, filling only to slightly above the line where the neck of the cone widens out.
- bake at 350° F for about 22-25 minutes, until a cake tester comes out clean.
- cool completely.
- make up your instant pudding mix that you’re using for the filling and refrigerate overnight.
Fill Your Ice Cream Cone Cupcakes
- using a melon baller or a teaspoon, scoop out some cake from the top of each cone to hold the filling.
- put the pudding mix you made up last night into a gallon sized Ziploc bag or a piping bag.
- pipe about a tablespoon of pudding into the cavity of each ice-cream cone cupcake.
- using a gallon sized Ziploc bag with a 1” hole snipped in one corner and some white frosting, pipe a ring around the top edge of each cone.
- gently push a meringue onto each cone, resting it on top of the ring of frosting, as shown.

You're done! Now go get a well deserved cup of coffee and sit back for a few minutes to admire your handiwork. Remember to take a picture while your masterpiece still looks perfect.
