is powdered sugar the best thing to stop fondant sticking?

I just started working with fondant and gum paste and I'm having issues with the powdered sugar I use to keep it from sticking.

The sugar coats the fondant and gum paste and I can't get it to all brush off. I tried dipping a paintbrush in water to brush it over and it made it shiny and sticky looking.

Any advice is GREATLY appreciated!!

Hi Cris,

You can try mixing the powdered sugar with a little corn starch. Sometimes that helps.

Also, make sure that you're using the bare minimum of powdered sugar that will keep the fondant from sticking. Too much and you'll have trouble removing all the excess.

A large, dry artist's brush is usually the best tool for the job. Just be patient and keep gently brushing the surface to remove all the excess.

As you discovered, you don't want to add any kind of moisture since it will make the surface of the fondant sticky.

For small amounts of fondant - say enough for a flower, you can roll the fondant between two sheets of parchment paper. This requires a lot less powdered sugar.
