This eye-catching Jack O Lantern Cake is one Halloween Cake that'll scare up lots of compliments. You can't go wrong with this scary fellow as the centerpiece of your next Halloween party.
Or, if you've been on the hunt for Novelty Birthday Cakes, this one's perfect for an October party or fall themed event.
It's super easy to do. You can either bake the cakes in two Classic Fluted Bundt Pans or three 10" Round Pans
. If you use the round pans you'll just have a little shaping to do with your knife but it's no big deal.
And don't forget to pick up some great, co-ordinating party supplies and costumes.
OK, let's get started!
ingredients for the perfect Jack O Lantern Cake
You'll need:
- cakes - Pumpkin Spice Cake is perfect
- filling - Chai Spice Cheesecake Filling is phenomenal
- orange buttercream frosting
- ginger snap, or similar, cookie crumbs
- 1 cup chocolate chips for the eyes, nose and mouth
- fruit roll-ups, fruit by the foot or fruit leather for the stem detail
- plate or board to hold finished cake
The First Step To A Successful Halloween Cake
- bake the cakes and cool completely.
- stack the two bundt cakes with wider ends together and fill between the layers to secure. This forms your basic pumpkin shape.
- level the narrow ends of your pumpkin and secure one end to a cake circle
with a dollop of frosting.
- add a crumb coat - this is a very thin coat of un-tinted frosting you apply to 'set' the crumbs.
- refrigerate the cake(s) for an hour or so to let the crumb coat set.
If you baked your cakes in the round pans, you'll need to stack and fill between the layers, attatch the cake to a cake circle then use a small serrated knife to trim the cake into a basic pumpkin shape before applying a crumb coat.
assemble your Jack O lantern cake
This is where we add the details that bring out your Jack O Lantern's true personality!
- frost the entire cake with orange buttercream.
- now's the time to secure your cake to a plate or board with double-sided tape to stop it from sliding around.
- you'll have a jack o lantern cake that looks something like this, so far.
- with a small serrated knife, carve out eyes , nose and mouth just as you would if you were carving a real pumpkin.
- melt the chocolate chips and using the back of a small angled spatula
'paint' the insides of the eyes, nose and mouth cavities with the melted chocolate, as shown below.
- form the stem by rolling up one piece of fruit leather staggering the edges as you go, forming a cone shape, then push the finshed stem into the top of the pumpkin.
- make the vine details by cutting three strips of fruit leather about 1/2" wide and winding them around as you secure one end, then the other, into the frosting around the stem, as shown below.
- sprinkle cookie crumb 'dirt' around your jack o lantern cake to finsh.




You're done! Now go get a well deserved cup of coffee and sit back for a few minutes to admire your handiwork. Remember to take a picture while your masterpiece still looks perfect.
