I made this Little Mermaid Cake for my daughter's 6th birthday.

I used a box mix that I modified a little. Both tiers are yellow cake with buttercream filling.

All of the coral, seaweed and bubbles are edible - made out of colored royal icing and white chocolate.

I have been decorating cakes for about 2 years and I would consider myself a beginner.

Tips For Completing This Cake:

1. Pipe the royal icing onto lollipop sticks so that way when they dry - the sticks are already attached and ready to be put on the cake.

2. This cake was actually simple to make - you can use the same concept with many different themes.

I've been googling mermaid cakes to get ideas for my daughter's 4th birthday party and I really really love your cake! I am going to attempt it. I have done a two-tier layer cake before. My questions for you would be how did you get the color icing the pretty teal blue? Do they sell that color? And how exactly did you get the undersea plants like that (besides the great tip about using lollipop sticks)? Is there a tool to cut them into the shapes or did you do that with your hands? Many thanks in advance! Nice job on a beautiful cake!!
