I made this Little Mermaid Cake for my daughter's 6th birthday.

I used a box mix that I modified a little. Both tiers are yellow cake with buttercream filling.

All of the coral, seaweed and bubbles are edible - made out of colored royal icing and white chocolate.

I have been decorating cakes for about 2 years and I would consider myself a beginner.

Tips For Completing This Cake:

1. Pipe the royal icing onto lollipop sticks so that way when they dry - the sticks are already attached and ready to be put on the cake.

2. This cake was actually simple to make - you can use the same concept with many different themes.
