Making a cake in advance
Hello,
I'm doing my own wedding cake.
I'm going to bake the cakes and freeze them to make icing easier.
I'm going to be doing the marshmallow fondant - how far ahead could I make the cake? In my experience fondant 'seals' in the freshness...
what do you suggest?

You should be alright if you bake and freeze the cake layers a week in advance. Make sure to double wrap the layers before freezing (plastic wrap then aluminum foil). Frost and cover in fondant about 3-4 days before the wedding and add the finishing details 2-3 days before.
