ingredients for the perfect mardi gras cake
- Cake – try Spicy Chili Chocolate Cake if you dare!
- Filling - Cinnamon Swirl Buttercream is perfect
- 1 batch of buttercream
- sky blue, yellow, violet and black gel food color
- Ziploc sandwich bags or disposable decorating bags
- #1 round decorating tip
- small leaf tip
- Cake plate or board to hold finished cake
first steps to a perfect mardi gras cake
- bake the cakes and cool completely.
- level the cakes and split each into two layers horizontally.
- fill and assemble each cake on a separate cake circle
and secure with a dollop of frosting to stop it from sliding around.
- add a crumb coat - this is a very thin coat of un-tinted buttercream you apply to 'set' the crumbs.
- refrigerate the cake(s) for at least one hour.
mardi gras cake assembly
- divide the buttercream in to five bowls.
- Leave one white and tint the others medium green, golden yellow, rich purple and black.
- place your cake(s) on a cake plate or board with at least 2” all around and secure with double-sided tape.
- starting at the bottom edge of the cake and working vertically, frost half with purple and half with green frosting.
- using the black frosting and a Ziploc bag with a small hole snipped in the corner, or a disposable decorating bag with a #1 tip, pipe a large freeform squiggly line along the join between the two frosting colors.
- using the white frosting and a Ziploc bag with a small hole snipped in one corner, or a disposable decorating bag with a #1 tip, pipe a freeform squiggly line over the black one you just piped, as shown. These should look vaguely ‘musical’ in nature.
- using the yellow frosting and a Ziploc bag wit h a medium hole snipped in one corner, or a disposable decorating bag, pipe the outline of a mask shape in ½” pearls with three large feathers over the nose of the mask.
- using the same yellow frosting, pipe the collar of the jester on the opposite side of the cake.
- using the same yellow frosting again, pipe a row of pearls around the bottom edge of the cake.
- using the green frosting and a Ziploc bag with a medium hole snipped in one corner, or a disposable decorating bag with a small leaf tip, pipe decorative feathers across the top of the mask.
- using the white frosting and a Ziploc bag with a small hole snipped in one corner, or a disposable decorating bag, pipe outlines for the eyes in the mask and the tiny details around the eyes and on the green and yellow feathers.
- using the same yellow frosting, pipe the collar of the jester on the opposite side of the cake.
- using the same white frosting pipe half of the jester’s face, as shown.
- with the black frosting, pipe the other half of the jester’s face.
- using the purple frosting and a Ziploc bag with a small-medium hole snipped in one corner, pipe the three pointed sections of the jester’s hat.
- using the yellow frosting, pipe some decorative circles on the tips of the jester’s hat.
- using the white frosting, pipe small dots all around the edges of the jesters collar and hat pom-poms and fill in the star on the black half of the jester’s face, for some extra detail. Also pipe a row of small pearls in between below and in between each of the larger yellow ones around the base of the cake.
- using the black frosting and a Ziploc bag with a small hole snipped in one corner, pipe tiny dots on top of the white dots you just piped and fill in the eye detail on the white half of the jester’s face. Also pipe a row of tiny black pearls above and in between the yellow ones around the base of the cake.
- using the green frosting and a Ziploc bag with a small hole snipped in the corner, pipe tiny dots in between each of the yellow pearls around the base of the cake and on the yellow feathers of the mask for some great little finishing details.
