Marshmellow Fondant... storage?

by Kathy

Hello, I made the MMF using your recipe, I noticed you had answered someone else if they want to store it to put it in the fridge, is this necessary?

There seems to be nothing in it needing refrigeration, but I want to be sure, another similar recipe says to wrap it in plastic wrap, and store in an air tight container, which I have done but I'm concerned if I put it in the fridge will it become too hard when I need it in a week?

Also, if I want to attach flat dots made of MMF to the MMF cake covering, what is the best way to do this? I have a tube of "Write on Gel" that's clear from a cake shop I got a few years ago, would that work as a glue?

Thank You in advance for your help!

Kathy

From the editor:

Hi Kathy,

You can store the marshmallow fondant wrapped either in the fridge or at cool room temperature. It will keep longer in the fridge and there's no need to worry about it being to stiff. You just microwave it on high for about 10 seconds and it's ready to go!

To attach the dots, or any other fondant decoration, I recommend very lightly brushing the back of the decoration with clear alcohol, like vodka or gin. It evaporates quickly, avoiding any breakdown of the fondant.
