Need a whipped icing recipe.

Hello,

I will have a upcoming wedding this summer. The bride wants cupcakes-which is normally no big deal. However my problem comes with the icing. She is requesting whipped icing for them all . I have never done whipped before. Was wonder does anyone have a good crusting whipped icing? The icing would also need to be able to use for decorating as well

For decorating, depending on the complexity of the design, you may need to use buttercream. You could try this recipe for stabilized whipped cream from Wilton, which is fine for frosting and basic decorating.

The major problem though, is going to be that the cupcakes cannot be left out for any length of time with a whipped cream frosting on them. Even stabilized whipped cream will start to melt and you have food safety concerns since cream is perishable.

Also, whipped icing does not crust. If her reason for whipped frosting is that she doesn't like buttercream, perhaps you could convince the bride to try an Italian Meringue Buttercream. Often people who say they don't like buttercream have only ever tried the commercial ones which are full of shortening. Italian Meringue holds up fairy well in heat and is very versatile...oh, and it tastes amazing! Not too sweet.
