Explanation of Orange/Lemon Curd

Hi Sandy,

Orange/Lemon curd is a cooked sauce made from eggs, butter, sugar and lemon, lime or orange juice. It is traditionally used as a dessert topping or filling - think lemon meringue pie. You can buy it at most good supermarkets but you really can't beat homemade and it's very simple:

to make Curd:

1/3 cup granulated sugar
1 egg
1/3 cup citrus juice (lemon, lime or orange)
2 tablespoons of zest
2 tablespoons plus 2 teaspoons butter, melted

In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Stir in juice, zest and butter. Cook for one minute intervals on high, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Cover the curd with cling film placed directly on the surface of the curd and refrigerate until set. Keeps in the refrigerator for about a week.
