Putting the fondant on the cake?

Do you have a tutorial on how you put the fondant on the cake? How do you prepare the cake so it is ready for the fondant? As you can see I'm a beginner here. But I'm excited to practice making a small fondant covered cake. I'm also curious if you have a recipe for a light and airy chocolate mousse filling for the cake?

As far as refrigerating the fondant, how long can you keep it in the fridge for? I'm thinking of making a monkey type cake for my little one when he turns one this summer and I want to try to make the cake in steps over a few days.
