Red Velvet Cake Recipe

I guess my questions really are, does anyone have an easy red velvet cake recipe and a good cream cheese frosting recipe that would go on a wedding cake? Some of them look rather complicated!

I have taken 3 of the Wilton cake classes and was asked after I sent one of my cakes to my husbands work by someone he works with if I would be interested in doing his daughters wedding cake. They want a red velvet cake with cream cheese frosting.

It's fairly simple, they want it to be ivory with fondant pearls around the base of all 3 tiers. I found that you can buy the fancy fondant pearls so I let the mother know about that.

My concern is I am no expert and have not worked with cream cheese frosting, nor have I ever made a red velvet cake recipe from scratch. Is there a cream cheese frosting recipe that will ice smooth like buttercream does? The picture she gave me of the cake, definitely looks like they covered it with fondant, it's just too perfectly smooth to be anything else plus it kind of rounds on the edges.

I remember the first cake I ever made for someone else. It's quite nerve wracking, I know. But, just remember, they liked your cake enough to ask you to do this, so they are already familiar with your work.

Just make sure that your client knows that cream cheese frosting will never look the same as the picture she's given you. Explain to her that what she's showing you is fondant. That way there won't be any disappointment when the cake arrives.

Cream cheese frosting is easy to work with. It spreads just like buttercream and tastes fabulous. It just might become your go-to frosting for all your cakes. The only caution I have is that if you're working in high humidity, it is prone to melting and you should experiment with different ratios of powdered sugar and cream cheese to achieve the consistency you like.
