Hi Debbie,

I'm not sure if you're referring to storing the buttercream itself or storing a cake covered in the buttercream, so I'll give you some tips for both situations:

Buttercream can (and should) be stored in the fridge for up to two weeks before using, or frozen for up to three months.

A cake covered in the buttercream is best stored in the fridge until about an hour before you want to serve the cake, but if you're planning on covering the cake in fondant, which you don't want refrigerated, it's fine to have the buttercream out of the fridge for a day or two.
