sheet cake

what is the best way to split a sheet cake without it tearing? I have a cake lifter but ummmmm...no deal!! I am now cooling yet another and will not stop until I get it. I am ready to just bake two and stack them. LOL

I have used a long piece of cotton to 'slice' through my cakes. Just hold your cotton nice and taught (not too much to snap in half) and as you're running it through, check on both sides of the cake that you are still maintaining a centre line.

First your cake must be completely cool,refrigerating the day before really helps. Slice your cake in half horizonally, then slice the top half in two vertically (only the top half). Using a thin cookie sheet lift one half of the top off and fill. Replace that half, repeat with the other half. When you ice the cake you will never know it was split in two.

NEVER, never cut any cake while fresh out of the oven. Cakes need to cool completely for an hour or two and even better if you wait 24 hours and the cake has time to firm up and flavor enchances. If you don't have time to do this. Once cake is COMPLETED COOLED, pipe a line of icing up one side of the cake and then cut cake as needed. Take as previously commented, a flat cookie sheet, or I use a cake board, dusted with a little powdered sugar and put gently between layers and slide through layer. (The powdered sugar helps it to slide). After filling, realign the cake so the piped icing lines up. This way you know the cake will be leveled again. Hope this helps!

I must agree that a cake that has been frozen first is much easier to work with. I don't know why, but it seems to change the "working" consistancy without changing the flavor or texture.
I have had good success using a large flat cookie sheet or two to lift the split layer, then leave it on the sheet until you are ready to replace it. Of course, a 2nd cake would always work ;).

Yes, thank you very much. I had not thought of that but I can see how it would work. Baking another one this week end (half sheet) and I will freeze that puppy.

I've found that freezing cakes make them a whole lot easier to handle and cut. In the past when I have tried to split a cake while it was fresh out of the pan, it fell all to pieces. Hope this helps.
