Just wait till you try these gourmet cupcakes! The secret is the cream cheese in the Spice Cake Recipe. It’s Chai Spice Cheesecake in a cupcake – heaven! What really takes these cupcakes over the top is the amazing Chai Spice Buttercream frosting – it’s indescribably good!
The only problem you’ll have is that your friends will be begging you to make these all the time. Not such a bad problem to have I guess!

Some Baking Tips Before We Begin

- If you use these great little party cups, which you can find here
, you don’t need to use cupcake pans. You can just sit them on a cookie sheet – less pans to store and easier clean-up!
- If you’ve forgotten to bring your ingredients to room temperature you can cheat a little and still get great results. Just beat the butter for about 2 minutes at high speed in your mixer and put the eggs in hot tap water for about 10 minutes.
- This Spice Cake Recipe can be made as one larger cake also. Just use a 9" round pan or similar size and bake for about 30 minutes, or until a cake tester comes out clean.
ingredients for a perfect spice cake recipe
you'll need:
- 8 ounces cream cheese
- 8 ounces butter
- 1 ½ cups sugar
- 1 teaspoon Vanilla Extract
- 4 large eggs
- 1 ¾ cups plus 3 tablespoons unbleached all purpose flour
- 5 tablespoons cornstarch
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon freshly grated nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground cardamom
Preheat oven to 350° F. Line up 24 party cups or line two 12 hole cupcake pans with cupcake liners and spray around the top of the pans with non-stick cooking spray.
- using an electric mixer beat butter at high speed until light and fluffy.
- add the cream cheese and beat at high speed until really well combined.
- add the sugar and beat until light and fluffy.
- one at a time, add the eggs, beating well after each addition.
- add the vanilla while the mixer is running on low speed. Mix until combined.
- sift the flour, cornstarch, baking powder, salt and spices together on to a piece of parchment or wax paper.
- add the dry ingredients to the wet ingredients and mix on low speed just until smooth.
- fill the cupcake liners about 2/3 full.
- bake for around 22 minutes or until a cake tester comes out clean.
- Cool the cakes in the pan (if you used a regular cupcake pan) for 15 minutes then turn out on to a rack to cool completely.
Now For The Icing On The Cake!
This frosting is what truly makes this Spice Cake Recipe so amazing.
you'll need:
- 1 pound powdered sugar
- ¾ cup vegetable shortening
- 1 stick butter (1/2 cup), room temperature, cut into 1” pieces
- ¼ teaspoon salt
- ½ teaspoon pure vanilla extract
- ½ cup Chai tea concentrate (Tazo brand or similar)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon freshly grated nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground cardamom
- using the whisk attachment on your stand mixer, mix the powdered sugar, salt, spices and vanilla on low speed until combined
- add the chai tea concentrate and mix on low speed until smooth
- add the shortening and mix until well combined
- add the butter, on piece at a time, and mix until combined.
- turn your mixer to highest speed and whip frosting until almost doubled in volume – about 12 minutes.
Assemble Your Cupcakes
Fill a piping bag or gallon sized Ziploc bag, fitted with your favorite tip, 2/3 full with the frosting and pipe a swirl of frosting on to each cupcake.
