How do I decorate an eight inch vanilla cheesecake to look like a sunflower only using fresh fruit?

Hi Karen,

Here's an idea for you:

Peel some fresh mango and slice it into thin wedges. Make a circle of petals by laying the wedges on their side, with one end extending past the edge of the cheesecake by an inch or so and the other end pointing into the center of the cake. Make a second circle on top of the first one, with the ends of the petals set in about an inch from the first row.

Fill the center of the flower with a mound of fresh blueberries or raspberries and you're done!
