Traveling with cakes

I have to make a cake to serve 200. I would like to bake the cakes before I leave because I will not have access to an oven. I will be able to make the frosting and decorate where I'm staying. It's a 7-hour drive. The cake will be 3 tiers and 100 cupcakes. It's a white chocolate/raspberry filled cake. Someone suggested freezing the cakes/cupcakes, then putting them in our small freezer and putting the freezer in the back of the truck. What do you think? Thank you.
