I have to make a cake to serve 200. I would like to bake the cakes before I leave because I will not have access to an oven. I will be able to make the frosting and decorate where I'm staying. It's a 7-hour drive. The cake will be 3 tiers and 100 cupcakes. It's a white chocolate/raspberry filled cake. Someone suggested freezing the cakes/cupcakes and putting in our small freezer, then putting the freezer in the back of the truck.
What do you think?

Hi Layla,

That's a lot of cake to transport! I think freezing is probably a good idea. Just make sure to wrap the cakes really well - first in a layer of heavy duty plastic wrap, then a layer of heavy duty aluminum foil, then another layer of the plastic wrap.

On such a long drive, if you don't have a cooler large enough for the job, transporting in a small freezer is a good option.

Good luck, and don't forget to take lots of pictures and come back and show off your cakes.
