A great Triple Chocolate Cake Recipe like this is definitely only for serious chocoholics and I’ll admit it – I’m a serious chocoholic! My distraction of choice is dense and rich with serious in-your-face chocolate flavor. That sums this amazing recipe up perfectly.
This cake is like therapy on a fork. If you have a girlfriend in need of some TLC you couldn’t find a better pick-me-up.
It’s adapted from a fabulous brownie recipe by Tish Boyle in her cookbook "The Good Cookie". If you like cookies you’ll love this book. I love to start with one recipe and morph it into something entirely different. You never know what you’ll discover along the way.
When you look at the ingredients you’ll probably do a double take at the amount of butter, but I did say this was rich and dense – definitely not a low calorie treat! Try the variations too – they are awesome.
ingredients for the perfect triple chocolate cake recipe
- 6 ounces bittersweet chocolate, chopped
- 3 ½ sticks of butter
- 1 cup cocoa powder (dutch processed)
- 2 ½ cups granulated sugar
- 8 large eggs
- 2/3 cup sour cream
- 4 teaspoons pure vanilla extract
- 1 cup all-purpose flour
- ¼ teaspoon salt
- 1 ½ cups good quality chocolate chips (I use Guittard Milk Choc chips)
Preheat oven to 325° F and prepare 2 x 9 inch round cake pans by buttering and flouring the sides (with cocoa powder) and lining bottom of pan with a wax paper circle.
- sift the flour and salt together on to a piece of parchment or wax paper.
- heat the chopped chocolate and butter, in a microwave safe dish, on high for 1 minute intervals until melted. Stir after each minute.
- transfer to your mixer bowl and, using the paddle attachment, mix in the cocoa powder and sugar on low speed until well blended.
- add the eggs one at a time, mixing well after each.
- add the sour cream and vanilla and mix well.
- add the dry ingredients and mix on low speed until just blended.
- fold in the chocolate chips by hand.
- divide the batter into the prepared pans and bake 35-40 mins, until a cake tester comes out clean.
- cool in pan for 15 minutes then turn out onto rack and cool completely.
