Different Kinds of Sugar
by: Michelle

Hi Neena,

Confectionery sugar is a very fine powdered sugar used for frostings, dusting the top of baked goods etc. It's also called icing sugar, powdered sugar or 10x super fine sugar. It's not possible to make this very successfully from regular sugar, unless you have a Vitamix or other commercial grade, high speed blender.

Brown sugar is just white sugar that's had molasses added in the processing for color and flavor.

Castor sugar is just another name for granulated or white sugar.

Hope this helps.

Regards,
Michelle (editor)
