Vanilla cake filling question..

My son is turning 5 and he wants a vanilla cake.So I am thinking of a vanilla cake with creame cheese frosting..But I am not sure what filling to use with the combination.Can you please suggest some fillings?

Cream Cheese Buttercream

I would use a cream cheese filling and go easy on the sugar, like you said. Use just enough to get it sweet enough to taste good to you (I use a stick of butter/8 oz cream cheese/1 tsp vanilla/a little lemon juice/as much sugar as you want - even as little as two cups.) Keep in mind, the more powdered sugar you add, the thinner it becomes and the less filling you will be able to use with out it sliding all over the place. No amount of incorporating more air by beating will make it any thicker once you get too much sugar in it. There is nothing better than a thicker layer of cream cheese filling between delicious cake!!! I have been adding a little cream cheese - up to 8 oz - in my buttercream for a most delicious flavored frosting that isn't too thick or soft to stick to a cake. Just remember to cut way back on your liquid so that it doesn't get too runny.

maybe you could....

maybe you could use a cream cheese pudding for a filling. The taste may blend with the frosting.

I like using pudding as is pretty easy to make.
