What does corn starch do to a cake?

Hi Carly,

Corn starch is used in conjunction with all purpose flour to replace cake flour in many cake recipes. I always list the two together because I find lots of my visitors in different parts of the world don't have easy access to cake flour, specifically, and using corn starch (corn flour) is an inexpensive alternative that's easily accessible for everyone.

Cake recipes call for cake flour because it contains less gluten and more starch than other types of flour, providing a finer texture that cakes require.
