What Icing To Use!?!

Hey there!

My son is turning 1 year old. I'd like to make the cake for his birthday. I'm a little confused on which icing to use.

I was thinking of using bananas and strawberry as a filling with a not so sweet icing that I can also smooth out with a paper towel.

Is buttercream icing the best choice and, if so, can I use less sugar than in the recipe you have in this website?

Hi Katherine,

You can't really use less sugar if you want a frosting that 'crusts' so you can smooth it with a paper towel. It's the amount of sugar in a recipe that will enable the frosting to crust.

But you could achieve a less sweet taste by using a cream cheese frosting recipe, like the one we have here.

Try adding 1 tablespoon of meringue powder per pound of powdered sugar. This will also help the frosting crust so you can smooth it with a paper towel.
