What is the best way to colour chocolate for decorating?

I am decorating a cake with shards of chocolate around the side of the cake to resemble flames so wish to colour the chocolate red, yellow and orange. What should I use to colour the chocolate please?

There are three ways to produce colored chocolate very successfully.

1. Oil Colors that are made especially for coloring chocolate. You add these after the chocolate is melted and mix well to distribute the color evenly.

2. Powder food colors, which are added a little at a time, after the chocolate has been melted.

Both are good choices because they don't contain any water, which is the enemy of chocolate. This makes them easy to use and versatile, since you can also use them to color buttercream.

3. The third option is to buy pre-colored candy melts in red and yellow. Use them individually, then mix the two to make orange.
